These are the key things that Halsey’s has been serving up for the people of Hitchin and beyond since 1854, so we intend to carry on that tradition.

Cheese

From the essential, everyday stalwarts of the discerning household to the esoteric tastes of the cheese aficionado, you'll find we have a selection to satisfy.

We know a lot about our cheeses and take time to understand the qualities and characteristics of each dairy and its produce. It means we can help you plan the best ways to store and serve your cheeses so that you enjoy them the way the cheesemaker intended.

  • The UK and Ireland are world-renowned for their hard cheeses, from Cheddar to Red Leicester to Cornish Yarg. But the rest of Europe has some greats too, with Comté from France, Pecorino Romano from Italy and Gruyere from Switzerland.. and we supply them all!

  • Choose from classic Brie and Camembert styles, washed rinds from across Europe, or our selection of soft goat's cheeses.

  • Choose from our selection of traditional and modern blue cheeses from across Europe - spicy, rich and melt-in-the-mouth Roquefort from France, soft and creamy Gorgonzola from Italy, spicy cave-aged Picos de Europa, from Spain and the ‘Supreme Champion' at the 2014 World Cheese Awards, Bath Blue from the UK

  • We want to introduce you to new experiences too so we have sourced a range of biscuits, crackers, pickles, chutneys and other treats we hope will bring a smile of delight when enjoyed with our cheeses.

Halsey's has been the purveyor of a wide range of first-class teas and coffees to the people of Hitchin for many, many years. All are available to sample in the Eatery, prepared by experts, or for you to take home and enjoy.

  • Our amazing selection features loose-leaf teas including green teas, herbal teas and fruit infusions.

  • Our wide range of coffee beans is carefully kept (‘though they never spend long with us!) and ground to order. You’ll find a range of great blends too. Of course, we always have decaffeinated options.

  • There is both art and science to making the perfect beverage, and we have sourced the very best tools to help you do this.

    We also have a fabulous selection of tempting treats to accompany your drink of choice.

Halsey’s Coffee Partnership

Halsey’s has been supplying the people of Hitchin with quality coffee for a very long time and was once renowned locally for roasting coffee within these walls. Alas, those days have passed, but the tradition continues, and we are delighted to have partnered with Hand Roasted Coffee Warehouse, a family-run coffee roasting company from London.

Our roasting profiles have gone into the history book of Halsey’s and have been shared with and innovated by our roasters. Based on the success of our Halsey’s Original blend, they have helped us expand our range, offering new and modern coffee options for our customers to explore alongside our traditional coffees.

We have hand-picked 12 roasts that provide a range of flavours, showcasing some of the best coffee-growing regions in the world, and we have created four beautifully balanced blends, each with its own unique flavour profile, to cover every palate.

Fairly sourced, not fair trade!

Without a range of well-managed sustainable coffee farms to work with, there will be no future for coffee - not for the farmers, the millers, exporters & importers, cuppers, roasters, coffee shops and ultimately the consumer. This is why we have chosen to collaborate with Hand Roasted Coffee Warehouse, as they work closely with the farms, ensuring that through direct trade and environmentally sound practices, along with respecting seasonality, the farms can consistently supply high-quality beans.

This allows the farms to command higher prices for their crops (up to 5 times the Fair Trade minimum), which is our way of investing in their and our future. In addition, we do not insist that they pay for certifications such as organic or Fairtrade so that the farmers can reinvest the costs they would have otherwise spent on this back into their crops to ensure consistently high quality and continuity.
